Studio Nori is a 32-seat restaurant built around a 12-seat sushi counter. Chef Kenji Mori and his team prepare a seventeen-course omakase rooted in Edomae tradition, using fish flown from Toyosu twice weekly and produce from Midwest growers in season.

There is no menu. There is no rush.

THE DINING ROOM

À la carte.

The 20-seat dining room is served from a separate à la carte menu — the same sourcing and standards as the counter, in a more relaxed format. Walk-ins sometimes possible; reservations recommended.

CHEF & OWNER

Kenji Mori.

Kenji Mori trained under Chef Hachiro Mizutani in Ginza for seven years — an apprenticeship that begins with rice and ends, eventually, with fish. It ends with the knife. With knowing what each piece of fish needs, not what you want to do to it.

After Ginza, he spent four years as sous chef at Masa in New York. He opened Studio Nori in Chicago's West Loop in 2022 because he wanted to do Edomae in his own space, without compromise, for thirty-two people a night.

Studio Nori's fish arrives from Toyosu twice a week. The rice is Koshihikari from California, seasoned with red vinegar. The vegetables come from three farms in Michigan and Illinois whose growing practices Mori has personally visited.

There is nothing on the menu that wasn't deliberate.
